After dinner walk

Anna and I have been having after dinner walk since this Sunday. It is great and we have a lot of fun walking around in the new neighborhood. She’s been having trouble of sleeping and I’ve been having trouble focusing on my studying. I talked to our Dearest and Professional PT (Karen) on Sunday and she suggested us to do some exercises. So we decided to take a walk after dinner. It really helps us a lot. Now Anna can sleep through the night and I can concentrate more on the study after the walk. We will do jogging once we pick up more on the walk. I hope we can walk our weight off as well. HAHAHA!!

Nightmare

I had a very weird dream last night. I even screamed for help and woke myself up in the middle of the night. So I’ve been “fishing” all morning.

The dream I had was very weird. I was in a very dark room with another person in. I didn’t know that person at all. We were taking care of 3 little kids. They were very sick and they were lying in the beds. Then they die one by one. After the last one die, I was very sad. We sat down in the dark room and cried. After a while, I went to the other room with cabinets inside the walls. I opened up one of the drawers and I saw a body inside. Right after I opened the drawer, I saw one of the kid’s faces. The kid’s eyes were wide opened and looked at me. I could feel the pain that the kid had and it really scared me. I screamed my lung out after I saw the face. I was trying so hard to wake myself up cause I know that I won’t be able to stand that scary moment if I was still in the dream. Ah…what a night for me.

Friday off

Finally, it is the time for my Friday off before my exam. My supervisor let me take Friday off every other week until the exam so that I can have 3 straight days for my study. Tomorrow will be my first Friday off and I am kind of excited about that (even I can’t go anywhere but study). HEHE!! I am glad that my work is not as busy as I used to be. So I can take off as much time as I need. Also my co-workers gave me a lot of tips on the test. I am very happy about that. However, I am still very nervous about the test cause it is a very important exam in my life. I will try my best ga la.

Someday

Someday - I can forget about you.
Someday - I can face what you'd done to me.
Someday - I can have a normal dream without you in it.
Someday - I can live without you in my mind.
Someday - I can stand up on my own.
Someday - When will that be?

Very upset!!

Ah, I found that my LCD monitor on my cell phone has a crack running across this morning!! I just got this phone in Dec last year!!! It is expensive too!!! I feel so bad seeing that crack. I think I did that when I removed the wine cooler and Hi-Fi out of the car last night. Oh I have double “meat pain”!! One is for the wine cooler and Hi-Fi (since they are not cheap) and the other one is my Phone!!! My little sister will yell at me for that. I can’t believe I did that!! I don't know why everything I own have cracks!!!

Cooking Class 1

Veggie Soup

Hey I made a pot of veggie soup this weekend and it is yummy and healthy.

Ingredients:

2 big white onions
1 butter-squash
5 plum tomatoes (you can use the other kind as well)
1 pack of mushroom
1 pack of 95% lean ground beef / you can just use half pack
A little bit of salt

1) Wash the onion, mushroom, butter-squash and tomatoes
2) Cut the onions, mushroom and tomatoes in pieces.
3) For the butter-squash, cut it in a half and then take the “lon” out. Cut it in pieces.
4) Boil water in the pot. Remember to just fill 2/3 of the pot. Put the butter-squash in and boil it for 10 min.
5) Add the onion and tomatoes in and boil it for another 10 min.
6) Add the ground beef in and boil the soup for 30 min. Make sure to stir the soup a little bit and separate the beef in small pieces.
7) Add some salt in and that will be a tasty veggie soup.

* If you have a thermo boiler, you can put all the ingredients in and wait until it is boiling. Then take the whole pot to the thermo pot. The soup should be done in an hours. Add some salt in it and that will be a tasty veggie soup.

Notes:
a) The skin and “meat” of butter-squash will be separates at the end. Since the skin is pretty hard, you can take it out when you are having the soup. I used to put potato instead of butter-squash. However potato has a lot of carbohydrate, so I use butter-squash instead this time.
b) I know some people would prefer not to add meat into the soup. For my opinion, I will add a little bit so that it will bring out the freshness of the veggie. If you skip the meat, the soup will not be that tasty.
c) In the American supermarket, you will find there is different kind of onions. I normally will use white onion for soup and yellow onion for stir fired.

Salmon with steam Asparagus

I always cook salmon for dinner. It is tasty and it is easy. You can use a conventional oven to bake it. You can have this entrée in 30 min.

1 salmon filet
2 teaspoons of garlic powder
A little bit of black pepper
4 tablespoons of soy sauce
1 teaspoons of brown sugar (or you can use regular sugar)
A bunch of Asparagus
1 slice of butter (optional)

1) Clean the salmon filet and Asparagus.
2) Combine the soy sauce and brown sugar in a bowl. Put the salmon into the sauce. Let it sit for 5 min.
3) Put the Asparagus into the steamer for 10-12 min depends on how big your asparagus stem is.
4) Put the garlic powder and black pepper on the top of the salmon.
5) Put the salmon to the conventional oven/oven for 7-10 min.
6) Put a slice of butter on the top of the asparagus if you want.

Then you will have you entrée.

Notes:
a) For choosing Asparagus, I normally choose the small stem one. It tastes fresher than the big stem.
b) Also if you like honey, you can put some honey on the top of the salmon after it cooked for 7 min.

Cooking is not really difficult and time-consuming work. You can have dinner in an hour (with a pot of soup and a main dish).

50 degrees or lower……Cold!

I used to feel cold in the old office (40+ years old building) but surprisingly I still feel cold in the new office (3 years old building). I always have my sweater on through out the year. Sometime the office is colder than outside temperature in the winter!! I almost need to wear gloves in order to type. I even need to blow some warm air to my hands frequently to heat up a little bit. Our thermostats are already set to 75 degrees but the air definitely is way less than that. I thought that I am crazy because some of the men here wear shorts and short sleeves. However, I discovered something this morning. I am not the only one in the office who feels cold all the time. I saw a PM who is wearing a heavy cloth sitting in her office!! She looks like she is working in North Pole. What a relief!!

Homemade meals

I finally started to cook some homemade meals this weekend. It is because Anna and I found that we gained a lot of weight during the move. We ate out a lot, although we enjoyed the food very much. HEHE!! Also Anna ate a lot of preserve food lately and it makes her headache worst. So we have to get back to our normal eating habit (3 light meals per day - mainly veggie, fruits, little meat and carbohydrate). As a lot of people know, I can’t have heavy food (like oily food). I can’t have any black pepper beef rib la. HAHAHA!! It was a pretty good start this weekend.

Christopher

Just past Monday, Anna and I went to a place called Christopher in Main Line for lunch. We passed by the area after finished some businesses in the Main Line area. It was a pretty good place for dining. We ordered an Ahi Tuner Pizza (cold pizza with Ahi Tuner, creamy sauce and sweet ginger), a Chicken Salad sandwich (with pear, apple and grape) and corn chowder soup. I like the pizza a lot cause it is not greasy. The homemade soup is not very thick and with a lot of veggie inside. The food there is great and the environment is very warm. It is really a relaxing place for a break in the middle of a busy day.
