Veggie Soup

Hey I made a pot of veggie soup this weekend and it is yummy and healthy.

Ingredients:

2 big white onions
1 butter-squash
5 plum tomatoes (you can use the other kind as well)
1 pack of mushroom
1 pack of 95% lean ground beef / you can just use half pack
A little bit of salt

1) Wash the onion, mushroom, butter-squash and tomatoes
2) Cut the onions, mushroom and tomatoes in pieces.
3) For the butter-squash, cut it in a half and then take the “lon” out. Cut it in pieces.
4) Boil water in the pot. Remember to just fill 2/3 of the pot. Put the butter-squash in and boil it for 10 min.
5) Add the onion and tomatoes in and boil it for another 10 min.
6) Add the ground beef in and boil the soup for 30 min. Make sure to stir the soup a little bit and separate the beef in small pieces.
7) Add some salt in and that will be a tasty veggie soup.

* If you have a thermo boiler, you can put all the ingredients in and wait until it is boiling. Then take the whole pot to the thermo pot. The soup should be done in an hours. Add some salt in it and that will be a tasty veggie soup.

Notes:
a) The skin and “meat” of butter-squash will be separates at the end. Since the skin is pretty hard, you can take it out when you are having the soup. I used to put potato instead of butter-squash. However potato has a lot of carbohydrate, so I use butter-squash instead this time.
b) I know some people would prefer not to add meat into the soup. For my opinion, I will add a little bit so that it will bring out the freshness of the veggie. If you skip the meat, the soup will not be that tasty.
c) In the American supermarket, you will find there is different kind of onions. I normally will use white onion for soup and yellow onion for stir fired.

Salmon with steam Asparagus

I always cook salmon for dinner. It is tasty and it is easy. You can use a conventional oven to bake it. You can have this entrée in 30 min.

1 salmon filet
2 teaspoons of garlic powder
A little bit of black pepper
4 tablespoons of soy sauce
1 teaspoons of brown sugar (or you can use regular sugar)
A bunch of Asparagus
1 slice of butter (optional)

1) Clean the salmon filet and Asparagus.
2) Combine the soy sauce and brown sugar in a bowl. Put the salmon into the sauce. Let it sit for 5 min.
3) Put the Asparagus into the steamer for 10-12 min depends on how big your asparagus stem is.
4) Put the garlic powder and black pepper on the top of the salmon.
5) Put the salmon to the conventional oven/oven for 7-10 min.
6) Put a slice of butter on the top of the asparagus if you want.

Then you will have you entrée.

Notes:
a) For choosing Asparagus, I normally choose the small stem one. It tastes fresher than the big stem.
b) Also if you like honey, you can put some honey on the top of the salmon after it cooked for 7 min.

Cooking is not really difficult and time-consuming work. You can have dinner in an hour (with a pot of soup and a main dish).
